Ingredients
- 2 cups dry lentils rinsed
- 1 1/2 Tbsp olive oil
- 1 onion dice
- 6 garlic cloves minced
- 7 cups vegetable broth
- 3 tsp cumin
- 1 tsp Kosher salt
- 1/8 tsp allspice
- 2 Tbsp lemon fresh squeezed juice
- 1/2 of rice
- 4 cups of broth (veggie or chicken) Bring to a boil add the lentils cook for 10 minutes (if you are in USA lentils break very fast) until tender. Add cumin, salt, pepper, and allspice.
- Turn down heat....add rice and allow to simmer for about 10 minutes.
- In a soup pot heat olive oil. Add the onion (julianas) Julienne pieces of an onion and garlic. Saute until onion and garlic are translucent aside (dontttt mix yet)
- Add the lemon juice and olive oil- toooo taste
